Juicy tomatoes tossed with garlic, thyme, salt, pepper and olive oil
Baked for 20 minutes at 200 C

Yummy! I usually get lots of roma tomatoes when on sale and make some chutney; and some roasted tomatoes to make a paste sauce out of them. The concentrated tarty tomatoey flavor is absolutely delicious in the pasta.

What kind of oven do you toast them in in India? The closest I have seen at my mom's and inlaws is a microwave/ convection oven combo.

Yes Malini - except that i found these skins too tough!

Jaya - I use a Bajaj OTG for now - soon will be using a in built high capacity oven :)when I move to my new place
